1Slice the cucumber

Wash and cut into pieces of similar thickness.

2Mix the dressing

Combine sesame, seasoning and chili to suit your taste.

3Toss & serve

Mix close to serving time to keep the cucumber crunchy.

⚠ Check first: Salt can draw out water, so avoid dressing too far in advance.

Craving a snack that is fresh, crunchy and just a little spicy? This easy Korean-inspired cucumber dish turns one English cucumber into a punchy, shareable plate in about ten minutes. You don’t need a stove, oven or deep fryer. Add chilled barley tea or lime sparkling water and the snack table is ready.

Korean oi-muchim means seasoned cucumber. This version is an approachable snack adaptation with a slightly tangier dressing, not a claim to be the single traditional or definitive Korean recipe. It is best mixed just before serving, while the cucumber still snaps.

Quick snack card

  • Total time: roughly 10 minutes if your ingredients are ready
  • Yield: 2 small appetizer plates, or 4 side-dish portions
  • Method: no-cook, one mixing bowl
  • Spice: adjustable from mild to medium
  • Best drink matches: cold barley tea or cucumber-lime fizz

Ingredients: short, flexible, familiar

  • 1 medium English cucumber, washed (about 10–12 oz)
  • 1 tablespoon finely sliced green onion
  • 1 teaspoon toasted sesame oil
  • 2 teaspoons rice vinegar
  • 1 teaspoon soy sauce or suitable gluten-free tamari
  • ½–1 teaspoon Korean red pepper flakes (gochugaru), to taste
  • 1 teaspoon toasted sesame seeds
  • Optional: ½ teaspoon sugar or maple syrup, ¼ teaspoon minced garlic

FRESH CUCUMBER CRUNCH

SLICE · TOSS · SERVE

Five easy steps

  1. Wash the cucumber under cool running water. Cut into thin diagonal slices or bite-size half-moons, about ¼ inch thick.
  2. Make the dressing: in a clean bowl, whisk sesame oil, rice vinegar, soy sauce and ½ teaspoon gochugaru. Taste with a clean spoon and add more chile flakes only if you want the extra heat.
  3. Add vegetables: put the cut cucumber and sliced green onion in the bowl. Toss gently for 20–30 seconds to coat.
  4. Finish with sesame: sprinkle on the toasted seeds. For a little sweet-and-sour balance, add a small amount of sugar or maple syrup if desired.
  5. Serve promptly. If preparing more than 10–15 minutes in advance, store the cucumber and dressing separately in the refrigerator until guests arrive.

Two easy alcohol-free drinks

1. Cold barley tea

Chilled roasted barley tea (boricha) is a simple toasted-grain flavor that pairs nicely with spicy cucumber. Brew or buy it according to the product instructions, cool it safely and serve over ice. Barley contains gluten, so check the label and offer water instead for guests avoiding gluten.

2. Lime sparkling water

Add ¾ cup cold sparkling water to a glass of ice with a squeeze of lime and two cucumber slices. It is refreshing without extra added sweetness.

Make it your own

  • Less spicy: use a pinch of gochugaru, then adjust.
  • No sesame: omit sesame oil and seeds, replacing the oil with a small amount of neutral oil. Check packaged seasonings for allergens.
  • Less salty: begin with ½ teaspoon soy sauce, taste and add more if needed.
  • More tang: add a few drops of rice vinegar, but do not overwhelm the cucumber.
  • For a party: serve in little bowls or cups with small forks, not as a wet dip over chips.

What makes the cucumber watery?

Salt, vinegar and dressing draw moisture from cucumber over time. For a quick snack, the easiest way to keep it crisp is to mix only when you are about to eat. If a batch becomes watery, drain a little liquid and serve cold; do not pretend it can remain fully crunchy for days.

Ingredient substitutions for a U.S. grocery store

English cucumbers work because they are usually crisp and have relatively small seeds. Persian cucumbers work too; use about two or three small ones. Gochugaru is often sold in Korean markets and some larger U.S. supermarkets. Generic cayenne or chili powder can taste much hotter or differently seasoned, so do not swap at a 1:1 amount without tasting.

Food safety and allergens

Use a clean knife and board, wash produce and refrigerate prepared vegetables promptly. The standard dressing contains soy and sesame; barley tea contains barley and is not gluten-free. Keep personal allergy needs in mind. For food handling, see the USDA guidelines linked below.

For perishable foods, USDA food-safety advice recommends refrigeration within two hours, or within one hour when temperatures exceed 90°F (32°C). Follow package labels, keep utensils clean and refrigerate leftovers promptly.

What makes this guide different?

Instead of requiring unfamiliar sauces or a long shopping list, this snack has a small U.S.-grocery-friendly ingredient list, mild/medium adjustment, an actual 10-minute method and two alcohol-free drinks. For background on the Korean oi-muchim tradition, see Maangchi’s Korean cucumber dish. The recipe above is our independently written variation.
