Sweet corn, stretchy cheese, and a bubbling skillet: Korean corn cheese is a small snack with big comfort-food energy. This version is designed for a U.S. home kitchen with canned corn, shredded mozzarella and a small pan. We also suggest a crisp cucumber-lime drink and an easy unsweetened iced tea, so the pairing never depends on alcohol.

In Korea, corn cheese (콘치즈) is widely known as a simple side dish or anju—food served alongside drinks. The Korean cooking site Maangchi documents it as a classic Korean snack and emphasizes draining excess moisture. Our proportions and quick stovetop method below are an independently written, simplified variation, not the same recipe or a claim of firsthand testing.

How to make Korean-style skillet corn cheese

  1. Drain the corn well. Pour corn into a colander, shake away the liquid and pat the kernels gently with a clean towel. This small step is more important than extra mayonnaise for avoiding a watery skillet.
  2. Warm a medium nonstick skillet over medium to medium-low heat. Add the butter and chopped onion. Cook approximately 2–3 minutes until the onion softens without scorching.
  3. Add the corn and stir for about 2–3 minutes to help evaporate remaining water. Cook until steaming hot, adjusting heat to prevent burning.
  4. Mix in mayonnaise only if using it. Stir briefly, then level the corn into an even layer. Taste with a clean spoon before adding extra salt; canned corn and mayonnaise may already be seasoned.
  5. Sprinkle the shredded mozzarella over the corn. Turn the heat to low, cover with a lid and warm for about 2–4 minutes until the cheese is fully melted and the mixture is hot. Cooking time varies by pan and cheese.
  6. Serve safely. Turn off the heat, garnish with scallion greens and pepper, and let the skillet rest briefly. The pan remains dangerously hot; serve in a heat-safe dish if children are present.

Two drinks that match the flavor

1. Cucumber-lime sparkle

Put 2 washed cucumber slices, a squeeze of lime and ice in a glass. Add ¾–1 cup plain chilled sparkling water. The bright, unsweetened taste can balance the rich melted cheese.

2. Unsweetened iced black tea

Serve ¾ cup chilled unsweetened black tea over ice with a lemon wedge. Use decaffeinated tea if preferred. Because the corn has its own sweetness, there is no need to make the drink sugary.

Why is my corn cheese watery?

Canned corn holds a surprising amount of liquid. If it goes straight from the can into a covered pan, steam may collect underneath the cheese. Drain the corn, pat it dry and evaporate moisture before adding mozzarella. Do not pour the canning liquid into the pan. Also keep mayonnaise modest.

What cheese works best?

Low-moisture mozzarella melts in long, gentle strands and is easy to find in many U.S. supermarkets. Monterey Jack can work as a mild substitute, but it will change the flavor. A very salty aged cheese alone may overwhelm the sweet corn. The recipe is meant to be approachable rather than a test of which cheese brand is best.

Is this an authentic Korean restaurant recipe?

Corn cheese is associated with Korean dining and drinking-food culture, but families and venues use different ratios and toppings. We describe this as Korean-style home corn cheese, not a definitive recipe from a particular restaurant. For a source on the dish’s context and another preparation style, see Maangchi’s corn cheese guide.

Allergens, food safety and leftovers

The standard recipe contains milk; mayonnaise usually contains egg. Read the ingredient labels. Keep canned corn and dairy handling hygienic, and refrigerate cooked leftovers promptly. Do not leave the melted-cheese dish on a buffet for hours. USDA guidance generally advises refrigeration within 2 hours (1 hour above 90°F / 32°C).
