Crunchy outside, tender inside. These oven-baked zucchini fries turn a familiar vegetable into a snack with a seasoned Parmesan crumb coating. A lemon-mint fizz or peach iced tea makes an easy, alcohol-free pairing. Zucchini is naturally moist, so the biggest trick is to cut evenly, blot well, and leave room on the baking sheet.

Quick recipe facts

  • Servings: roughly 3 snack portions
  • Preparation: around 15–20 minutes, plus oven preheating
  • Bake: around 18–25 minutes at 425°F (218°C)
  • Equipment: cutting board, paper towels or clean kitchen towel, baking tray, three shallow bowls
  • Best texture: served immediately after baking

Ingredients

  • 2 medium firm zucchini, about 1 pound total
  • ¼ cup all-purpose flour
  • 1 large egg, beaten
  • ½ cup plain or seasoned panko breadcrumbs
  • ⅓ cup finely grated Parmesan cheese
  • ½ teaspoon garlic powder
  • ¼ teaspoon black pepper
  • Light olive-oil spray or small drizzle
  • Optional: a pinch of paprika and extra lemon wedges

Five steps to crispy zucchini fries

  1. Heat your oven to 425°F (218°C). Line a large baking sheet with parchment, or lightly oil the surface following pan guidance.
  2. Wash and dry the zucchini. Cut off the ends, split lengthwise into halves, then into even finger-length batons about ½ inch thick. Blot cut surfaces thoroughly.
  3. Set out three bowls: flour; beaten egg; panko combined with Parmesan, garlic powder and pepper. Dip each baton into flour, egg and then the crumb mixture, pressing gently so the coating sticks.
  4. Arrange in a single, uncrowded layer on the prepared sheet and mist lightly with oil. Do not pile zucchini in a mound.
  5. Bake for about 18–25 minutes, turning or rotating once midway if needed. Remove when crumbs look golden and the zucchini is tender. Exact cooking time depends on cut size and oven conditions. Serve promptly.

Two easy drinks to serve

Lemon-mint sparkle

In a glass of ice, add 2–3 washed mint leaves and a lemon wedge. Top with ¾–1 cup plain sparkling water. The fresh citrus makes a lively contrast to the savory Parmesan crust.

Quick peach iced tea

Combine ½ cup unsweetened chilled tea with ¼ cup peach nectar or a small amount of peach juice and ice. Taste before adding extra sweetness. Use decaffeinated tea if desired.

A simple yogurt dip

Mix ¼ cup plain Greek yogurt with 1 teaspoon lemon juice and a pinch of garlic powder or dill. Serve cold and store safely. A dairy-free dip is possible with a suitable substitute.

Why are my zucchini fries soggy?

  • Too much moisture: zucchini needs to be blotted before coating.
  • Uneven pieces: tiny strips can brown before thick ones turn tender.
  • Too much oil: a light coating helps; soaking the crumbs does not.
  • Not enough space: crowded pieces steam one another.
  • Waiting too long: they are best hot, immediately after baking.

Oven versus air fryer

An air fryer may brown small batches faster, but the correct cooking time varies widely by model. Use the oven procedure here as the primary method. If adapting, follow the air-fryer manufacturer’s capacity and temperature advice and check frequently rather than assuming a universal minute count.

Vegetarian, allergen and storage notes

Parmesan is traditionally made with animal-derived rennet in many cases. If you need a vegetarian snack, check the cheese label or choose a suitable vegetarian hard cheese. The standard version contains wheat, milk and egg. Refrigerate dairy-based dips promptly; cooked leftovers generally lose their crisp texture.
