Those small green peppers that arrive blistered at a tapas bar are surprisingly easy to make at home. A hot skillet, a little oil, flaky salt and a squeeze of lemon turn fresh shishito peppers into a snack in around ten minutes. Serve them with a simple lemon yogurt sauce and cold cucumber fizz or iced tea.

Shishito is a Japanese-type pepper commonly sold in U.S. produce departments and farmers’ markets. Many taste mild, but the heat of individual fruits varies. Never guarantee that every pepper will be mild, and let guests know the spice level can surprise them.

Quick snack facts

  • Servings: 2–3 small appetizer plates
  • Active preparation: about 3–5 minutes
  • Skillet cooking: approximately 5–8 minutes, depending on pan, batch size and pepper thickness
  • Equipment: large heavy skillet, tongs, kitchen towel, small bowl
  • Best drink partners: lemon-cucumber sparkling water or unsweetened chilled barley-free tea
  • Main difference: not breaded, fried or glazed—just fresh pepper flavor

Ingredients

  • 8 ounces (225 g) fresh shishito peppers, rinsed and completely dried
  • 1–2 teaspoons neutral oil suitable for high-heat cooking
  • A pinch of flaky salt or ordinary salt
  • 1 lemon, cut into wedges
  • Optional ¼ teaspoon toasted sesame seeds for garnish, if safe for your guests

Quick lemon yogurt dip

  • ¼ cup plain unsweetened Greek yogurt
  • 1 teaspoon lemon juice
  • Small pinch of garlic powder
  • Optional: chopped parsley or dill
  • A little cold water to adjust texture

START WITH FRESH PEPPERS

Step-by-step blistered shishito peppers

  1. Wash and dry. Rinse the peppers and dry every surface thoroughly. Water on hot oil can splatter; do not add damp produce to a sizzling skillet.
  2. Heat the pan. Put a large heavy skillet over medium-high heat. Add about a teaspoon of neutral oil and heat until it shimmers, not until smoking heavily.
  3. Add peppers in one layer. Put peppers in carefully with tongs, leaving space so they blister instead of steam. Cook in two batches if necessary.
  4. Let them char lightly. Leave them undisturbed for about 1–2 minutes to develop brown spots, then turn with tongs. Continue for roughly 5–8 minutes total until blistered in several places and tender-crisp.
  5. Remove from heat. Transfer to a plate, sprinkle lightly with salt and add lemon wedges. Avoid eating stems and warn guests that some peppers may be hotter than expected.
  6. Serve promptly. Stir together the yogurt, lemon and garlic dip and serve it cold in a separate bowl.

Two easy drinks

Lemon-cucumber sparkling water

Pour ¾ cup chilled sparkling water over ice, with a washed cucumber slice and a squeeze of lemon. It complements a salty pepper snack without requiring alcohol.

Unsweetened iced tea

Serve ¾ cup chilled black or decaf tea with ice and lemon. If a pepper turns out hot, offer plain water and, for guests who tolerate it, a dairy-based dip; a drink alone does not guarantee relief from capsaicin.

Which version should you make?

Why don’t they blister?

  • Wet peppers: pat them dry thoroughly.
  • Overcrowded pan: fewer peppers per batch brown more evenly.
  • Cool skillet: wait until it is adequately hot, but avoid smoking oil.
  • Too much movement: leave peppers against the pan for brief intervals.
  • Overcooking: blister and soften, but avoid making all the peppers limp and scorched.

What if one is surprisingly hot?

Capsaicin concentrations vary among individual peppers. Avoid touching your eyes after handling spicy juices. Pause, drink or eat something comfortable, and do not treat a severe reaction as normal. People with allergies or difficulty swallowing should avoid foods that are not safe for them.

How to buy shishitos

Choose bright, firm, unspoiled peppers without heavy wrinkling or soft, wet spots. Some supermarkets carry shishitos only seasonally; a farmers’ market may be useful. Padrón peppers are a related-style bar snack but are not identical and may vary in spiciness, so do not swap without adjusting expectations.

How to serve at a party

Put a small dish out for discarded pepper stems and include a sign that says ‘mostly mild, occasionally hot.’ Keep yogurt dip refrigerated and bring it out in small portions rather than leaving it at room temperature for an entire event. To avoid burns, let the pan cool before guests reach for it.

Allergens and food safety

The yogurt dip contains milk, sesame is a possible garnish allergen and the peppers themselves are not guaranteed mild. Wash hands and produce before cooking, and refrigerate perishable leftovers within two hours (or one hour above 90°F / 32°C).

Make another vegetable snack

Try oven-baked Parmesan zucchini fries, Buffalo cauliflower bites, or Korean-style cucumber bites. The three guides use different cooking techniques and each includes a no-alcohol drink pairing.
